Smoked Trout

Trout is a popular sport fish, with a mild sweet flesh ranging in colour from pink to white.
It has been either hot or cold smoked to add a different flavour and preserve the fish.
Simply serve with lemon wedges, horseradish and brown bread and butter.
'Hot' smoked trout is a versatile cooking ingredient and can be used in pates, quiches and souffles.
